I was broke within 2 hours of shopping and couldn't go without money to spend. :(
Now my friend is pissed off at me because I stood him up. LOL shit happens.
So I sit here at 7 am bored out of my mind and preparing to make rice krispy peanut butter balls and squares. Dad is bringing me down home made pickles (recipe to follow, if I can find the damn thing) and snowballs, it's not Christmas without Newfie snowballs to munch on and leave for Santy Clause on Xmas eve.
The T's are excited and I am too, but not because I get anything (I never do :( ) but because my kids are. It's about them!
I will be back with another entry in a few with a link to a sad documentary I just finished watching and again tonight; because I plan to post and update regularly just to vent my troubles. :) so get used to it!!!
Recipe for Newfie "pickle" or chutney. Yummy with cold plates and Turkey dinner. Best served cold, like the way you use Cranberry sauce.
This is a traditional Newfoundland recipe.

cups (this is approximate) 35 min 15 min prep
| 1 1/2 | lbs cherry tomatoes, washed and cut in half |
| 2/3 | cup white sugar |
| 1 | cup white vinegar |
| 1 | teaspoon mustard seeds |
| 1/4 | cup pickling spices (tied in cheesecloth) |
| 2 | teaspoons salt |
| 6 | cups coarsely-chopped onions |
| 2 | cups coarsely-chopped granny smith apples |
- Put tomatoes in saucepan and add sugar, vinegar, mustard seeds, salt and pickling spices. Stir well. Bring to a boil, and boil for 5 minutes.
- Add chopped onions and apples. Boil vigorously for 5 minutes then cover tightly, turn off heat and let stand about one hour. (may be boiled longer if you like the onions really soft.
- Pack in jars and store in refrigerator.
RECIPE FOR SNOWBALLS:
In a large saucepan, combine and boil together gently over medium high heat for 5 minutes or until mixture reaches about 230 degrees F on a candy thermometer:
3 cups sugar
3/4 cup melted butter
1 & 1/4 cups milk
Once mixture begins to boil it is very important not to stir it at all.
Mix together
3 cups large rolled oats
1 cup unsweetened fine coconut
12 tbsp cocoa
Add the boiled mixture to the dry ingredients until well combined and chill until mixture is able to be shaped into 1 1/2 inch balls. Roll the balls in additional coconut. Makes about 4 dozen. These freeze very well.
